J'ai pas trouvé de norme ETSI qui parle de ça. Chez ITU la série L est
assez passionnante (faut voir les photos de machines de la L.48). Pour
ce qui nous intéresse L.63 en particulier recommende au moins 1,20m:
"The minimum depth of buried cables is typically 1.20 m." [1]

Ces document-ci ont aussi de chouettes dessins; le premier spécifie un
minimum de 75cm.

Le Rural Utilities Service[6] recommande:

" (3) Buried service wire or cable shall be plowed or trenched to a
depth of 12in. (305 mm) or greater where practicable in soil, 36 in.
(914 mm) in ditches, or 3 in. (76 mm) in rock. Depths shall be measured
from the top of the wire or cable to the surface of the ground or rock. "

Bon bref ça varie avec l'humeur du normalisateur/fabricant. Pour ce qui
est de FT je sais pas. Pour ce qui est des tuyaux d'eau on vise 80cm
pour pas être embêtés.
